For this recipe you'll need butter, powdered sugar, egg yolk, vanilla, flour, jelly of your choice, and pecans.
First you cream the butter and the powdered sugar together. I thought that this was the most interesting part of the recipe because I have never made a cookie that has powdered sugar used instead of granulated sugar.
Next you add in the egg yolk and vanilla and beat well. Sift the flour into the mixture and then mix.
Now you have to form teaspoon sized balls and put them onto the baking sheet.

Fill the indents with jelly (I used strawberry, grape, and orange) and then bake at 350 for 15 - 20 minutes (I baked mine for about 17 minutes and they turned out perfect).
When they're cool just dust the top with powdered sugar and they're ready to go! Now when I made them I tripled the batch so I would have plenty of cookies and I ended up with about 4 dozen. So I'd say that they make about a dozen a batch.
Ice-cream Cookies
6 tablespoons butter or margarine
6 tablespoons powdered sugar
1 beaten egg yolk
1 teaspoon vanilla
1 cup sifted flour
Instructions
Thoroughly cream butter and sugar
Add egg yolk and vanilla; beat well
Add flour
Drop teaspoons on un-greased cookie sheet
Top with fruits, nuts, jelly, or candies
Bake at 350 degrees for 15-20 minutes
